Butternut squash from the barbecue by Onno Kokmeijer

This pumpkin dish is versatile for use on your autumn menu.Serve it, for example, as a garnish, blend it into a smooth mousseline in a food processor, or serve cold as a salad, drizzled with flavorful pumpkin seed oil.

Ingredients

1butternut squash
Salt and pepper
Olive oil
3units.itemslemongrass stalks
Knorr Professional Ginger Puree

Preparation

  1. Using a cutter, make a two-centimeter diameter opening at the bottom of the butternut squash. Remove the pumpkin seeds through the opening.
  2. Season the inside with pepper, salt, and olive oil, and fill the squash with ginger and lemongrass.
  3. Grill the whole squash for about two hours at a moderate temperature on the barbecue.
