French toast with boerenmeisjes and cinnamon ice cream

Made from the Baker & Baker carrot loaf cake. This recipe is for approximately 6 pieces.

Ingredients

100gboerenmeisjes
500gMascarpone
100gCream
sugar to taste

1units.itemsCarrot loaf cake
140gWhole milk
10gbrandy from boerenmeisjes
2units.itemsEggs
100gSugar
2Cinnamon powder

Preparation

  1. Cut the boerenmeisjes into a fine brunoise.
  2. Mix mascarpone with the cream until smooth.
  3. Add sugar and the boerenmeisjes.

  1. Cut the top with icing off the carrot cake.
  2. Cut this into a fine brunoise.
  3. Mix all the ingredients for the batter.
  4. Dip the frozen slice of carrot cake in the batter and fry in butter on both sides until warm.

  1. Serve the cream of 'boerenmeisjes' on the 'french toast'.
  2. Scoop a ball of cinnamon ice cream on top.
  3. Garnish with the brunoise from the 'icing' side of the cake.
