Purple cauliflower
white cauliflower
hoijblanca olive oil

Preparation
- Clean the cauliflower and cut into slices of about 1 cm.
- Place the slices in a vacuum bag and vacuum seal with a splash of olive oil and some salt.
- Cook sous-vide at 75°C for 20 minutes.
- Cool quickly and place in the refrigerator.
- Remove the cauliflower from the vacuum and fry in olive oil or grill on the barbecue.
- Serve with burrata, beurre noisette, tomberry tomatoes, and roasted hazelnuts
