Preparation
- Blanch the butterhead lettuce for the lettuce mousse.
- Refresh and puree together with the flesh of the avocado.
- Add the cream and fish stock and season with salt, pepper, and a few drops of lime juice. Then chill.
- Pour the butterhead lettuce and avocado soup into the plate.
- Place the cleaned herring on top.
- Place the apple brunoise with the furikake, potato airbag, and purple radish on the herring.
