Infused shiitake & miso cocktail

Powerful cocktail with earthy notes and freshness by using yuzu liqueur & yuzu sake.Garnished with grated crispy shiitake.

Ingredients

1lWater
50gmiso broth
5gwhole coriander seeds
15gDried shiitake

60mlshiitake infusion
45mlyuzu liqueur
crispy shiitake
20mlyuzu sake

Preparation

  1. Wash the dried shiitake due to possible presence of sand.
  2. Mix all components and transfer to a vacuum bag.
  3. Vacuum seal and place the bag in a water bath at 80°C 

  1. Put the infusion of shiitake, yuzu liqueur, and yuzu sake in a shaker and shake well with ice to chill thoroughly.
  2. Strain into a glass.
  3. Grate some crispy shiitake over the top.
