
Infused shiitake & miso cocktail
Powerful cocktail with earthy notes and freshness by using yuzu liqueur & yuzu sake.Garnished with grated crispy shiitake.Ingredients
1lWater
50gmiso broth
5gwhole coriander seeds
15gDried shiitake
60mlshiitake infusion
45mlyuzu liqueur
crispy shiitake
20mlyuzu sake
Preparation
- Wash the dried shiitake due to possible presence of sand.
- Mix all components and transfer to a vacuum bag.
- Vacuum seal and place the bag in a water bath at 80°C 
- Put the infusion of shiitake, yuzu liqueur, and yuzu sake in a shaker and shake well with ice to chill thoroughly.
- Strain into a glass.
- Grate some crispy shiitake over the top.
