Arbequina olive oil
Sushi vinegar
various small cherry tomatoes
mason jar
Preparation
- Rinse the tomatoes thoroughly. Sterilize a preserving jar and place the tomatoes inside.
- Bring sushi vinegar to a boil and pour over the tomatoes. Add olive oil and seal the jar (use 6 parts sushi vinegar to 1 part olive oil).
- Store chilled (let sit for a few days for optimal flavor).
