
Jackfruit tacos with sriracha mayo
Tacos with jackfruit and Sriracha mayonnaise.Ingredients

400gjackfruit, rinsed and drained
1Cumin powder
1Chili powder
1small onion, chopped
4garlic cloves, ground
1Tomato paste
1Soy sauce
1Apple cider vinegar
1Smoked paprika
1Lime juice
1units.itemslarge avocado
Pinch of salt
Sriracha Mayo
fresh coriander leaves
Preparation
- Heat the oil in a medium-sized pan and sauté the onion and garlic until soft.
- Add the smoked paprika, chili powder, and ground cumin and stir for about one minute.
- Add the tomato paste, stir briefly to combine, then add the jackfruit along with the soy sauce and apple cider vinegar.
- Stir continuously until the jackfruit is completely coated. Add a splash of water if the mixture is too thick.
- Let simmer for about 10 minutes, then remove from the heat.
- Make a quick guacamole: mash the avocado with a fork and add the lime juice and salt.
- And now to assemble your tacos... Grab a few tortillas and generously fill them with the delicious jackfruit filling. Top with a portion of guacamole, sprinkle with coriander, and drizzle with a good amount of Sriracha Mayo.
