Kibbeh

Croquettes of fine bulgur and meat.Kibbeh, which actually just means little ball, is delicious in combination with, for example, fine bulgur mixed with minced meat, chorizo, pine nuts, and peas.

Ingredients

175gfine bulgur
50gchopped onion
250ghalf-and-half minced meat
350mlWater

Preparation

  1. Bring 350 ml of water to a boil, pour over the bulgur and let stand for about 20 minutes.
  2. Blend the onion, basil, minced meat, bulgur (amount to taste), and 50 ml water in a blender until combined.
  3. Add all remaining ingredients and puree until smooth.

  1. Cut the onion into brunoise.
  2. Toast the pine nuts at 150°C for about 8 minutes (toss occasionally) and salt them afterwards.
  3. Sauté the onions in the pan and add the meat.
  4. Season with salt and pepper and add baharat.
  5. Finally, add the pine nuts.

  1. Divide the dough into equal portions of about 50 grams and make sure you can moisten your hands with water.
  2. Divide the dough and make a small well in the center.
  3. Fill the well with about 2 teaspoons of filling, close the dough, and shape it. Keep your hands moist while kneading.
  4. Fry the croquettes at 180°C for about 3 minutes.
