Preparation

  1. Sauté the onion, za'atar, and garlic in the pan.
  2. Add the minced meat and fry until crumbly.
  3. Deglaze with the tomato paste and let it reduce.
  4. Cover the vine leaves with the tomato-minced meat mixture and heat in the oven.
  5. Place the hummus on the plate.
  6. Place the meat mixture on the hummus.
  7. Place the vine leaves on top and finish with lemon zest, cress, and dried broad beans.
