Matcha Tea Nitro-Sour

Fresh, alcohol-free matcha sour with Naturfoam and Flaxfiber, finished in a nitrogen siphon for a creamy, sparkling effect.Recipe by Martín Lippo. Inspired by classic ‘sour’ cocktails, but alcohol-free. This version uses matcha for intensity, lime juice for freshness, and sugar for balance. Naturfoam creates foam, while Flaxfiber contributes to a creamy texture. Thanks to the nitrogen siphon, the drink gets a silky, sparkling effect.

Ingredients

600gMineral water
5gMatcha tea

600gMatcha tea base
1.2gNaturfoam
50gSugar
20gLime juice
3gFlaxfiber

Preparation

  1. Put water and matcha tea in a blender jug.
  2. Blend until smooth.
  3. Strain with coffee filter paper.

  1. Put all ingredients in a blender jug.
  2. Blend until homogeneous.
  3. Strain with a fine sieve.
  4. Pour into an iSi Nitro siphon.
  5. Charge with a nitrogen cartridge (pure N₂).
  6. Shake vigorously.
  7. Chill in an inverted bain-marie or in the fridge at 4°C for at least 2 hours before use.
