
Nanban zuke

4Spring onion
mackerel fillet or salmon fillet
200gPotato starch
1carrot
2Onions
600mlUchibori Rice Vinegar
100mlSaké
1dried chili
600gYama teriyaki mirin
Preparation
- Clean the fish, remove the skin and bones, and cut into large pieces. Then pat dry.
- Slice the spring onion into fine rings, the carrot into julienne, and the onions into half rings.
- Mix teriyaki mirin, rice vinegar, sake, and chili and bring to a boil while stirring to make a sauce.
- Heat vegetable oil to 175 degrees.
- Coat the pieces of fish in potato starch so they are well covered all around and fry them in the oil.
- Mix the sliced vegetables and fried fish in a bowl with the warm sauce.
- Let the whole dish cool and preferably store overnight in the refrigerator.
- The dish is often eaten cold. Very tasty as finger food, part of a salad, or as a starter. Fatty fish is especially suitable for this preparation.
