Preparation
- Bake the pancakes as described in the basic recipe (see basic recipe at the bottom of the page).
- Blanch the haricot verts and bimi and chill.
- Toss the haricot verts with the vinaigrette.
- Cut the tomatoes into brunoise.
- Quickly sear the tuna in a hot pan or on the barbecue and slice into pieces.
- Spread a thin layer of olive tapenade on the pancakes.
- Top the pancakes with haricot verts, artichoke, tomato, tuna, boiled egg, anchovy, and tuna.
- Finish by tucking a few sweet and sour tomberry tomatoes between each layer.
