Panna cotta and poached pear with sage syrup

50gGranulated sugar

Preparation

  1. Peel the pears whole, but leave the stems on.
  2. Mix the sage syrup with 500 ml water.
  3. Put the sage lemonade, granulated sugar, sprigs of sage, cinnamon stick, and star anise in a saucepan and bring to a boil.
  4. Add the pears. Bring the liquid just to a boil and cover the pan. Poach the pears on low heat for 30 minutes. Check the pears regularly
