Planked mayo salmon American BBQ-style

A flavorful dish where salmon is cooked on a wooden plank and finished with a creamy mayo glaze in true American style.

Ingredients

Salt
Cane sugar
Kewpie mayonnaise
Norwegian salmon fillet
Pepper
Barbecue smoking planks

Preparation

  1. Soak the smoking plank in water for at least 3 hours.
  2. Season the thawed salmon with salt and pepper (leave the skin on).
  3. Brush with Kewpie mayo and sprinkle with cane sugar.
  4. Grease the plank with a neutral oil and place the salmon skin-side down.
  5. Cook at 160°C on the barbecue with the lid closed.
  6. Cook to a core temperature of about 58°C.
