Beet puffs

These red puffs taste delicious and brighten up your dish.

Ingredients

Beet juice
145gGrated semi-mature cheese
250grisotto rice

Preparation

  1. Cook the rice in salted water with a splash of beet juice until fully done. Puree the warm rice with the cheese into a batter. Season with salt.
  2. Pipe onto a silpat and bake in the oven at 160°C for about 10 minutes.
