10mlfresh lemon juice

30mlThe Botanist Gin

20mlEgg white

Ice cubes

Cordorniu 1551 brut

Preparation

Mash the raspberries into a puree.
Add all the ingredients except the sparkling wine.
Add ice cubes.
Shake for at least 8 seconds and strain into the glass.
Top up the glass with Cordorniu 1551 (sparkling wine).
