Salt and pepper
150gPlant-based butter
Pasta cooking water
25sage leaves
Preparation
- Fry 150 grams of Redefine Lamb Kebab and let it cool completely.
- Make a mound of flour on a work surface and create a well in the center.
- Put the eggs in the well and beat them lightly. While mixing, gradually add a bit of flour each time.
- Eventually, the mixture will form a rough dough. Knead the dough until it is smooth and supple.
- Then let the dough rest in the refrigerator for 1 hour.
- Add the fried and cooled lamb kebab to the raw lamb kebab.
- Make a small brunoise of the carrots and add them to the kebab mixture.
- Season the mixture with salt and pepper.
- Roll out the dough and fill the pasta with the lamb kebab.
- Let the butter melt in a pan. Wait until the butter turns light brown, then add a large ladle of cooking liquid.
- Let the sauce reduce until it thickens.
- Add the cooked pasta and make sure all the pasta is coated with a layer of brown butter sauce.
- Fry the sage leaves in a little neutral oil and then drain them well on a piece of paper towel.
- Place the pasta in the center of a deep plate and finish the dish with some fried sage leaves.
