Salad of glass noodles and octopus

Asian salad, delicious as a side dish.

Ingredients

1octopus
200gglass noodles
Red chili pepper
1Garlic clove
2Lime juice
4Sesame oil
chopped coriander
1Fish sauce

Preparation

  1. Place the thawed octopus in a dry pan over low heat. Put a lid on the pan and let the octopus cook for half an hour. As it heats, moisture will be released from the octopus. This way, the octopus cooks in its own juices.
  2. After cooking, cut the octopus to the desired size.
  3. Soak the noodles in hot water for 15 minutes and drain.
  4. Sauté red chili with the chopped garlic in sesame oil. Let cool and then add the lime juice and fish sauce.
  5. Pour this over the noodles and add chopped coriander and salt and pepper to taste.
  6. Place the noodle salad on the plate and arrange the sliced octopus among it.
