Salad of Dutch shrimp

Sesame tuile filled with Dutch shrimp, avocado and tomato, served with salad and a sesame-soy vinaigrette.

Ingredients

Dutch shrimp
60gSesame seeds
120gorange juice
150gMelted butter
Guacamole
Tomato
90gFlour
Lettuce
Aqua plate
Salt
0.5Sambal
240gPowdered sugar

Preparation

  1. Mix the orange juice, sugar, and flour into a smooth batter.
  2. Add the sambal, sesame seeds, and salt, and finally the warm butter.
  3. Let the batter rest in a cool place for 3 hours.
  4. Use a spoon to make circles of the batter and place them on a silicone mat or parchment paper, then bake at 175°C until evenly golden brown.
  5. Roll the sesame tuiles around a PVC tube or the handle of a whisk so they cool in the correct shape.
  6. Fill the tuile with the salad of Dutch shrimp, avocado, and tomato.
  7. Place on the plate with a little salad dressed with sesame soy vinaigrette.
