
Shiitakes with soy and ginger
A tasty Asian side dish.Ingredients
1Soy sauce
1Oyster sauce
50gdried shiitakes
1Sesame oil
1fresh ginger (chopped)
1Shallot, finely chopped
1clove of garlic (finely chopped)
Preparation
- Put the shiitakes in a bowl and pour over boiling water. Let stand for at least 1 hour. Strain the liquid and squeeze the shiitakes well. Cut to desired size if necessary.
- Sweat shallot, garlic, and ginger in the sesame oil. Add the shiitakes and sauté.
- Deglaze with the soy and oyster sauce. Stir the liquid well together.
- Add the soaking liquid and continue to cook over low heat (about 25 minutes).
- Thicken the liquid with potato starch if desired.
