Smokey barbecue chicken buns

The Smokey barbecue chicken buns are delicious rolls filled with chicken and a smoky barbecue flavor.

Ingredients

600gChicken thigh meat
25gSurinamese curry paste
3units.itemsjuice of limes
70gCoconut milk
3Garlic cloves
20gGinger syrup
20gsweet soy sauce
Pinch of salt

300mlWater
70gCoconut milk
300ginstant polenta flour
2Caribbean spice
Pinch of salt
125gGrated Parmesan cheese
100gButter

Smoking plank
Chicken broth
Hot honey

Preparation

  1. Roast the chicken thighs on the barbecue until cooked.
  2. Then grind together with the rest of the ingredients (filling) in the food processor to a 'minced' texture.

  1. Heat the water with the coconut milk, salt, Caribbean spice, and the butter.
  2. Bring to a boil, and while stirring, add the instant polenta flour.
  3. Mix everything well into a smooth mass.
  4. Then form balls from the dough (fist-sized).
  5. Place the balls on butcher's foil, cover with a second piece of butcher's foil, and press out to about 1 centimeter thick.
  6. Remove the butcher's foil and place some of the chicken filling on the dough.
  7. Now roll everything up tightly in the bottom sheet of butcher's foil so that the dough is well wrapped around the filling.
  8. Remove the butcher's foil and steam the buns at 100°C full steam (or use a steam basket) for 30 minutes.

  1. Soak a smoking plank in water for a few hours.
  2. Soak the buns in chicken broth (light soaking).
  3. Place the buns on the plank and put on the barbecue so the whole thing starts to smoke. This way, heat the buns.
  4. Drizzle some hot honey over and serve.
