
Red cabbage soup
Delicious with toasted bread and some sweet and sour red cabbage.Ingredients
1Shallot
1Red cabbage
1garlic clove
3Vegetable stock
0.5lalmond milk
Crème fraîche
splash of balsamic vinegar
baharat spices

Preparation
- Clean the cabbage and remove the outer leaves and core.
- Finely slice the cabbage and wash well.
- Finely chop the shallot and garlic.
- Sauté the shallot and garlic in smoked oil in a tall pan.
- Add the cabbage and sauté as well.
- Add baharat spices to taste and sauté thoroughly.
- Cut the Jonagold apple into pieces and remove the core.
- Add the apple to the pan and let everything stew with the lid on for about 3 minutes.
- Add the almond milk, vinegar, and stock.
- Let it simmer on low heat until the cabbage is cooked.
- Blend everything and strain the mixture.
- Add some crème fraîche before serving.
- Serve the soup with toasted bread and some sweet and sour red cabbage.
