Taleggio Tartelette

Savoury tartlet with taleggio cream, sweet pear, port syrup and fresh pomegranate seeds.

Bites, finger food, amuse-bouches... give it a name. One thing is certain: this is how you start dinner in style.

Ingredients

Pomegranate seeds
250gCream
port syrup
Tartelette
4gLeaf gelatin (soaked)
Mini pears
150gTaleggio

Preparation

  1. Bring 125 grams of cream to a boil.
  2. Add the taleggio, cut into pieces, and let it melt gently.
  3. Add the gelatin and stir until smooth.
  4. Pass the mixture through a fine sieve.
  5. Whip the remaining 125 grams of cream until soft peaks form in the stand mixer and mix with the warm mixture to create a smooth cream.
  6. Cut the pear to the desired size and place in the tartelette.
  7. Add some syrup to taste and fill the cup with the cream.
  8. Finish with pomegranate seeds.
