Tandoori chicken skewers
Tender chicken thigh, marinated in yogurt and tandoori paste, skewered with bell pepper and onion and grilled. Recipe by Paulami Joshi. Serves 4.Ingredients
2Red bell peppers
3Tandoori paste
2Onions (in 4 x 4 cm cubes)
2Greek yogurt
Mint chutney
400gChicken thigh fillet (in 4 x 4 cm cubes)
Preparation
- In a large bowl, mix the chicken with the bell pepper, onion, Greek yogurt, and tandoori paste. Mix well and let rest for 30 minutes to tenderize the chicken.
- Heat a grill pan with some oil. Thread the chicken, bell pepper, and onion alternately onto the skewers. Brush the skewers all around with some oil or butter and space them apart. Grill the skewers for 12-15 minutes until golden brown and cooked through.
- Serve the skewers with the mint chutney.
