
Red onion tarte tatin with goat cheese

200gRed onion trimmings
500mlRed wine sauce

Preparation
- Select the smallest onions from the bag.
- Peel and cut into slices of about 1 cm. Reserve the trimmings.
- Sear on both sides in a heavy-bottomed frying pan and let cook gently for about 10 minutes. Turn regularly, and add a pinch of sugar at the last moment so the onions caramelize nicely.
- Sprinkle the puff pastry with sugar and press the onion into it.
- Bake for about 15 minutes at 180°C.
- Finely chop the onion trimmings.
- Brown them in a pan with a pinch of salt.
- Deglaze with the red wine jus.
- Let simmer on low heat for an hour and then strain.
- Warm the tarte tatin in the oven.
- Pour the jus into a petal of the red onion.
- Crumble the goat cheese and sprinkle over the tarte tatin.
- Stick the pergamena di pane into the tarte tatin.
- Garnish with thyme leaves, balsamic glaze, and mustard caviar.
