Teriyaki Kingfish

We may get the highest quality fish from our own waters. We're talking about 'Kingfish Dutch Yellowtail'.

Kingfish, also known as Hiramasa, is often imported from Japan and Australia, but this Dutch Yellowtail is farmed on land in waters from the Eastern Scheldt in Zeeland.

Ingredients

Oil
Pepper and salt
2Dutch Yellowtail, cut from the back

1Water
35Soy sauce
5mlBrown sugar
1Honey
1Clove of garlic
1mlGround ginger
35Cold water
2kgCornstarch

Preparation

  1. Pat the fish dry.
  2. Rub both sides with some olive oil and season with salt and pepper (and optionally a grill rub).
  3. Prepare the barbecue or preheat a grill pan over medium heat.
  4. Place the tail skin-side down on the grill and cook for 4 minutes without turning. Flip the fish, lower the temperature, and grill for another 1-2 minutes. (Combine this with your favorite vegetables and/or potatoes, roasted in the oven or also grilled).

  1. Mix 1 deciliter of water, brown sugar, soy sauce, honey, garlic, and ginger in a medium saucepan and place over medium heat.
  2. In a small bowl, mix the cornstarch with the 1/4 cup of water and whisk until dissolved. Add this to the saucepan.
  3. Heat the sauce until it reaches the desired thickness. If the sauce becomes too thick, add more water to thin it.
