Tiramisu with Passion Fruit

The classic tiramisu gets an exotic twist with the intense flavor of passion fruit, making this a delicious dessert.This recipe is for about 6 servings.

Ingredients

500gFruit purée 100% Passion fruit
250gMascarpone
115gbrown sugar
Vanilla sugar
3units.itemsEggs
Speculoos

500gFruit purée 100% Passion fruit
4units.itemsEgg yolk
125gCaster sugar
50gCornmeal
5units.itemsgelatin sheet
500gWhipped cream

Preparation

  1. Separate the egg whites and yolks. In a bowl, blanch the egg yolk and sugar.
  2. Whip the egg whites until stiff.
  3. Add the egg whites to the egg yolk/sugar mixture, then fold in the passion fruit purée and mascarpone until a smooth consistency is obtained.

  1. Heat the passion fruit purée.
  2. Soak the gelatin in cold water to hydrate it.
  3. Mix the egg yolk and sugar, add the cornflour.
  4. Heat and whisk vigorously until it boils.
  5. Add the hydrated gelatin and let cool, then add the whipped cream and the cooled passion fruit purée.

  1. Crumble the speculoos and place on the bottom of a verrine.
  2. Alternately garnish with cream and passion fruit mascarpone.
  3. Repeat until the verrine is full.
  4. Top with fresh passion fruit seeds for decoration.
  5. Refrigerate for at least 24 hours before serving.
