Trafilata with fennel sausage, nduja chips and red wine sauce with duck ham

Trafilata pasta is a type of Italian pasta with a rough surface, which allows it to easily absorb sauce. The approximate cost price per person is €2.95.

Combine it with a red wine sauce, duck ham, pieces of fennel sausage, and chips enriched with nduja. This recipe is for 4 people.

Ingredients

Olive oil
1gShallot (chopped)
1units.itemsCelery stalk (stripped and cut into half-moons)
100gWinter carrot (brunoise)
80gTomato paste
4units.itemsSage leaf (chopped)
200mlRed wine
2units.itemsGarlic cloves (grated)
200mlChicken broth
120gDuck ham (diced)

300gTrafilata pasta

60gOlive oil
60gParchment bread
15gNduja (spicy spreadable salami)

Preparation

  1. Sauté the vegetables with the shallot and garlic in olive oil.
  2. Add the sage and cook for about 8 minutes on low heat.
  3. Add the tomato paste and briefly cook.
  4. Deglaze with the wine (allow the alcohol to evaporate).
  5. Add the chicken stock.
  6. Let it gently reduce to sauce consistency.
  7. Add the diced duck ham.

  1. Cook the pasta for about 12 minutes in salted water.
  2. Then let it cook for another two minutes in the sauce.

  1. Grill the sausages in the pan or on the barbecue.
  2. Cut each sausage into 4 pieces.

  1. Mix the nduja with the olive oil.
  2. Brush the parchment bread with it.
  3. Place briefly in the oven at 160°C (about 5 minutes).

  1. Spoon the pasta with the sauce onto a platter.
  2. Place the sausages on top.
  3. Garnish with arugula.
  4. Serve the spicy bread crackers separately.
