Vegetarian Caesar salad with halloumi

Everyone knows the Caesar salad, but why not try something a little different? Try this delicious Caesar salad with a delightful twist.

Ingredients

1Egg
2Lime juice
1green herb mustard
Samphire
2Parmesan cheese (finely grated)
Sunflower oil

brioche bread
Pepper
Salt

halloumi cheese
herb oil

Quail eggs
Salt
Parmesan cheese (finely grated)
romaine lettuce
Pepper

Preparation

  1. Mix the mustard, lime juice, and egg with a whisk.
  2. While whisking, add sunflower oil until the desired thickness is reached.
  3. Finely chop the samphire and season together with the Parmesan cheese.

  1. Cut the bread into large brunoise and make croutons from it in oil.
  2. Season with salt and pepper.

  1. Brush the halloumi cheese with herb oil and grill the cheese using a blowtorch.

  1. Boil the quail eggs in water.
  2. Arrange the Romaine lettuce on a plate, together with the croutons, boiled quail eggs, and halloumi cheese.
  3. Spoon the dressing over and finally garnish with shaved Parmesan cheese.
