Dill waffle with herring

This dish consists of a waffle and garnish.

Ingredients

4Water
200gButter
5gdissolved algae powder
10units.itemseggs (m)
Salt
200gFlour
chopped fresh dill

Cooked beets
Crème fraîche
Mayonnaise
sweet and sour chioggia beet slices
passion fruit vinegar

Preparation

  1. Dissolve the algae powder in the water. 

  1. Briefly smoke the cooked beets in cold smoke and blend them into the mayonnaise.
  2. Whip the crème fraîche with a little salt.
  3. Bring the passion fruit vinegar to a boil with sugar and marinate the sweet and sour chioggia beet slices in it.

  1. Place the herring on the waffle.
  2. Serve with smoked beetroot mayonnaise, salted crème fraîche, sweet and sour chioggia beet slices, and some herring caviar.
