
Warm foam of Nduja
Nduja is a delicious flavour enhancer in (Italian) sauces, but it is also a perfect ingredient to use in a cream or foam.Nduja is a spreadable spicy salami with Calabrian pepper.Ingredients

Preparation
- Finely chop the shallot and garlic.
- Finely grate the Parmesan cheese.
- Gently sauté the shallot and garlic without coloring until the shallots are translucent.
- Then add the nduja and fry briefly.
- Add the water and cream and bring to a boil.
- Once boiling, turn off the heat and add the Parmesan cheese, blend finely with a hand blender.
- Pour through a fine sieve and measure the quantity using a measuring jug.
- For each liter of liquid, add 16 grams of pro espuma hot. Blend again thoroughly and strain through a fine mesh sieve.
- Then put in a siphon and charge with pressure.
