Salmon with kohlrabi, spinach and white wine sauce with fish roe

Preparation

  1. Portion the salmon fillet and season the salmon with salt and pepper.
  2. Brown the salmon pieces on both sides in the clarified butter.

  1. Bring 1 dl of water to a boil and add the concentrated fish stock and white wine sauce.
  2. Bring the mixture back to a boil and season with citrus.
  3. Just before serving, stir the fish roe and chives into the sauce.

  1. Peel the kohlrabi and slice them thinly using a slicer.
  2. Blanch the kohlrabi slices briefly in salted water.
  3. Briefly stew the spinach in butter and season with salt and pepper.

  1. Place the cooked salmon together with the stewed spinach on the plates.
  2. Add the kohlrabi and spoon the sauce over.
