
Salmon rolls with asparagus cream

Ingredients
150gCream cheese
200gAsparagus
coarse black pepper
spring leaf lettuce
1Vinegar
2Oil
2Chives
1Mustard
400gSmoked salmon
Salt
Preparation
- Clean the asparagus, cook them in salted water until tender, and drain.
- Puree the asparagus in a food processor and mix with the cream cheese.
- Season the mixture with salt and pepper.
- Place a piece of foil about 40 centimeters long on the work surface.
- Sprinkle with coarse black pepper and lay the salmon pieces together in a rectangle of about 15 x 25 centimeters.
- Press the salmon down a little.
- Use a spatula to spread the asparagus cream and chives over the salmon.
- Lift one side of the foil and roll the salmon into a roulade.
- Wrap the salmon roll tightly in the foil and place it in the refrigerator for 2 hours or in the freezer for ¬Ω hour.
- Wash the lettuce.
- Mix the vinegar, oil, and mustard with ¬Ω tablespoon salt and 1 tablespoon water to make a dressing.
- Slice the salmon roll and serve on a bed of lettuce with dressing.
- Serve with fresh baguette.
