Madame Julie and Monsieur Sébastien represent the fifth generation of oyster producers. The oyster parks are spread along the western and eastern coast of île de Noirmoutier, where the continuous water flow provides an abundance of plankton, which benefits the oysters. The real Fines de Claires are salty and rich in minerals with meat that has a green to turquoise blue tint. For the holidays, they are specially packaged in a basket of six pieces, complete with an oyster knife.
