Capers are the unopened flower buds of the caper plant. This is a low, wide shrub with branches with thorns. The plant produces beautiful white flowers that are followed by berries with kidney-shaped seeds. The caper plant is cultivated in countries with a Mediterranean climate, such as in France, Spain, and Italy, but also in Western Asia. These caper capotes are slightly larger than the classic surfines and are ideal for various applications, including in salads, on pizza, and a steak tartare.
