This dish consists of grilled brill with beurre blanc and herb oil, chicory cooked in beurre noisette, Cévennes onion and Granny Smith apple, hazelnut cream.
Samphire is a sea vegetable with a crunchy texture and a salty taste. Wash the vegetable in cold running water and remove the tough and woody parts. Then blanch for a few minutes or stir-fry briefly. It is nice to make a samphire cream, for example, but samphire is also a surprisingly tasty snack when fried in a tempura batter with algae powder.
