The hunt for hare begins in the Netherlands and Belgium on October 15. Because hares are found in wooded areas, heathlands, but also in the polders between flower bulbs and sprout crops, they each develop their own individual taste. A traditional Dutch dish for autumn is hare stew. Hare leg is ideal for a delicious stew, but it also goes well with pasta with truffle.
