De Colosso is a robust, large blue cheese made from the exquisite milk of the rugged water buffalo. Buffalo milk contains much more fat and protein than cow's milk, which causes the cheese to mature completely differently. Through this maturation process, the blue cheese acquires a beautifully refined and complex flavor.
