In this dish, slices of winter carrots are arranged in overlapping layers and covered with a liaison, after which they are baked in the oven until gratinated.
Red winter carrots have an extra high concentration of beta-carotene. This gives the carrot the (almost) red color. The red carrot is very suitable for making carrot juice.
