Gratin of winter carrots

In this dish, slices of winter carrots are arranged in overlapping layers and covered with a liaison, after which they are baked in the oven until gratinated.

Winter carrots come in different types and colors, each with unique characteristics.

Ingredients

Black winter carrots
Red winter carrots
French sand carrots
Yellow winter carrots
2units.itemsEgg yolks
Water
Pepper
4Mascarpone cream
Nutmeg
Salt
Curry powder
Herb butter
Pecorino cheese

Preparation

  1. Mix different colors and types of carrots, clean and peel them.
  2. Slice the carrots thinly using a mandoline.
  3. Briefly blanch the slices in water and pat them dry.
  4. Make a liaison by mixing the egg yolks with the mascarpone cream using a whisk.
  5. Season the liaison with pepper, salt, nutmeg, and curry powder to taste.
  6. Grease an oven dish with herb butter.
  7. Arrange the carrot slices in overlapping layers in the dish.
  8. Pour the liaison over them.
  9. Tap the oven dish a few times on the worktop so the liaison can spread evenly.
  10. Cover with aluminum foil.
  11. Bake the gratin in the oven at 200°C for 30 minutes.
  12. Before serving, grate some pecorino cheese over the gratin and gratinate or reheat.
