
Roasted rutabaga with shawarma spices
In this dish, the rutabaga is roasted and flavored with 'shawarma spices'.Unlike other cabbages, rutabaga grows underground. Beneath the rough skin of this thick tuber lies the yellow, fragrant 'flesh'.Ingredients
Sunflower oil
Water
rutabaga
Smoked salt
Shawarma spice blend
Preparation
- Clean the rutabaga and cut into even coarse brunoise.
- Blanch the rutabaga for 6 minutes in water with smoked salt (start with cold water and bring to a boil).
- Pat the rutabaga dry.
- Mix sunflower oil with some smoked salt and shawarma spice blend using a whisk.
- Generously mix the rutabaga with the oil mixture.
- Roast the rutabaga in the oven at 200°C for about 25 minutes. Tip: shake occasionally to ensure even roasting.
