These scallops are fished in the Eastern part of the English Channel off the coast of Normandy. The shells are fished by special small fishing boats only between October and January, so that the shells do not carry coral and reproduction is not endangered. Each scallop is cleaned and selected by hand, then frozen within the hour for the optimal end product. This quick processing ensures that the specific taste and texture of the scallop is fully preserved. They can be used year-round and at a stable price.
