Strawberry tartelette with a candy mousse

6gleaf gelatin
Strawberry tartlets unfilled
230gRuby chocolate
70gCandy liqueur
600gCream 35%
Red fruit crumble
100gIcing sugar
100gEgg white
100gButter
0.5units.theelepelpink food coloring
Preparation
- Soak the gelatin.
- Heat the cream together with the candy liqueur in a pan.
- Dissolve the gelatin in it.
- Pour this warm over the ruby chocolate.
- Mix everything well and then let it cool and set completely.
- Whip until airy and pipe into the strawberry tartelette shells.
- Garnish with a red fruit crumble.
- Put the butter in a pan and add the coloring. Let it melt over low heat and make sure the coloring dissolves well in the butter.
- Then mix this with the rest of the ingredients.
- Spread the mixture thinly in a silicone mold and bake at 140°C until crispy.
