Chocolate flower pot filled with fruit salad, flugel granita and rocketshot foam.

Ingredients

Raspberries
Red watermelon
Tamarillo
Red pitahaya
Chocolate flower pots
Vanilla custard

Chocolate flower pots
Flugel water ice pops

150gPasteurized egg yolk
150gBarista coconut milk
2Rocketshot

Dried raspberries
Raspberry meringue

Preparation

  1. Clean the fruit and cut into even brunoise.
  2. Mix in some of the custard.
  3. Spoon this into the chocolate flower pots.

  1. Cut open the packages and pour into a container.
  2. Place the container in the freezer and stir occasionally with a fork to achieve the characteristic, grainy granita texture.
  3. Spoon a layer of the granita over the fruit salad in the chocolate flower pot.

  1. Use a hand blender to mix everything together.
  2. Put this mixture in a siphon and charge with two cream cartridges.
  3. Pipe the foam onto the granita.

  1. Grate the dried raspberries and cut the raspberry meringue, then garnish over the whole.
