Pineapple from the BBQ

Ingredients

1Vanilla pod
2Cinnamon sticks
2Lime juice
500gcaster sugar
200gBrown rum
Pineapple
200ggood olive oil

300gWater
100gGlucose
1kgSugar
Pandan liqueur

Oreo crumble
cinnamon ice cream

Preparation

  1. Briefly cook the ingredients over low heat and let them 'mature' overnight in the refrigerator.
  2. Remove the skin from the pineapple.
  3. Rub the pineapple with a little butter and place it in a tray on the Kamado BBQ at 180°C.
  4. Baste with the marinade every 20 minutes and rotate the pineapple 25 degrees every 20 minutes.
  5. After about 4 hours, the pineapple will be at its best.

  1. Bring the water to a boil in a preferably heavy pan.
  2. Add the sugar and glucose.
  3. Let it caramelize.
  4. Deglaze with a little water and the pandan liqueur.

  1. Place the pineapple on a cutting board along with the cinnamon ice cream, pandan caramel, and Oreo crumble.
