Apple sabayon with caramelized apple and cinnamon ice cream

Classic sabayon with an apple twist.

Ingredients

5Egg yolks
3apples
1Lime
60gVending machine sugar
120gApple liqueur

Preparation

  1. Whisk the egg yolks with the sugar au bain-marie until thick and foamy. Gradually add the apple liqueur.
  2. Cut the apple to the desired size. Sauté the apple in a little butter. Sprinkle with a little caster sugar and lightly caramelize. Spoon the apple onto a plate.
  3. Spoon the sabayon over the apple. Place a few quenelles of cinnamon ice cream in between. Grate a little lime zest over and serve immediately.
