Marinated strawberries with champagne sabayon

Strawberries and chocolate; a true ‘guilty pleasure’.

The strawberries are marinated in 'red wine aceto balsamico' for a delicious tang. The sabayon of champagne gives those acids an extra boost. Finished with salty granola and chocolate crisps.

Ingredients

2aceto balsamico vinegar
2Fine sugar
4units.itemsEgg yolks
100mlChampagne
chocolate brittle
granola

Preparation

  1. Neatly cut the tops off the strawberries and marinate them for about ten minutes in the aceto.
  2. Put the sugar, egg yolks, and champagne in a saucepan and whisk until fluffy over medium heat. Take your time and do not set the heat too high.
  3. Place the strawberries in the coupe and playfully present the bross and muesli on top.
  4. Pour the champagne sabayon into the coupe at the table and fill it generously.
