
BBQ pineapple marinated in rum
Pineapple marinated in rum, cooked on the BBQ and gratinated with coconut and cane sugar. Combined with cocoa and yuzu cocktail foam and a coconut crisp.This recipe is presented during the Chef's Table BBQ / van Gestel at the Horeca Event at HANOS Apeldoorn on September 26, 2023.
Ingredients
1Pineapple
100mlDark rum
100gCane sugar
2units.itemsStar anise
1Cinnamon stick
cocktail foam cacao & yuzu
1crispy coconut
Atsina cress
50gdesiccated coconut
Preparation
- Clean the pineapple.
- Put the dark rum and cane sugar in a pan and cook until the sugar is dissolved. Then add the star anise and cinnamon stick.
- Let this cool down.
- Put the pineapple together with the dark rum in a vacuum bag. (1 day in the fridge).
- Remove the pineapple from the vacuum bag and save the rum marinade.
- Boil down the marinade until it becomes a rum caramel sauce.
- Cook the pineapple on the barbecue.
- Cut the pineapple to the desired thickness.
- Sprinkle the pineapple with coconut and cane sugar and gratinate under the WeGrill.
- Garnish the pineapple with the cocktail foam, coconut crisp, and atsina cress.
