Bordalou base

2Eggs

cocktail foam ginger and lemongrass
2Egg yolks
grated lime
Pomegranate seeds
Preparation
- Bake the Bordalou in an oven.
- Whisk the eggs, yolks, and sugar together. Bring the lemon purée to a boil. Pour over the egg mixture. Heat again until the mixture starts to thicken.
- Cut the butter into small pieces and fold through the mixture. Fill a piping bag with this and let it cool down.
- Pipe the lemon cream onto the baked tartlets. Pipe the cocktail foam on top.
- Serve with pomegranate seeds and grated lime.
