
Brioche bread eggs benedict

Bussing brioche bread
cherry tomatoes

Preparation
- Bake the brioche bread: 8 min at 200ºC.
- Cut 1 slice from the brioche bread.
- Make the Hollandaise sauce, fry or steam the spinach, fry the bacon, poach the egg, and slice the tomatoes.
- Top the slice of brioche bread with a little Hollandaise, the smoked salmon, the lukewarm spinach, the crispy bacon, and finally the poached egg with some tomatoes.
- Before serving, put the fresh Hollandaise on the poached egg and finish with pepper, salt, and smoked paprika powder.
- Tip: only put the poached egg on the sandwich just before serving. This way, the yolk will only run out when your guests cut into the sandwich.
